LaLa Tacos Taco Catering Quality Assurance Process

How LaLa Tacos Maintains Quality at Every Taco Catering Event

LaLa Tacos Taco Catering Quality Assurance Process

At LaLa Tacos, every catering event concludes with a digital Quality Assurance Report completed by the lead caterer before leaving the event. The report is submitted electronically from their mobile device and is delivered instantly to the owner's inbox, allowing every event to be reviewed while the details are still fresh.

Unlike a paper checklist that may never be looked at again, our Quality Assurance Reports become part of the permanent operational history of every event we cater. They document timing, food service, presentation, guest feedback, employee performance, equipment, and operational details that help us continually improve our business.

Every morning, the owner personally reviews every Quality Assurance Report submitted from the previous day's events. Outstanding work is recognized, employee suggestions are reviewed, operational improvements are discussed, and opportunities for additional training are identified. This daily review process helps ensure that every event benefits from the experience gained at the hundreds of events before it.

Our Quality Assurance process also allows us to identify long-term trends. We can see which proteins guests enjoy most, which menu items receive the most compliments, how frequently taco bars are replenished, how our teams perform, and where small operational improvements can make an even better experience for future clients.

Presentation is equally important. Before guests begin arriving, every catering team texts photographs of the completed taco cart and taco bar directly to the owner. Because the photographs are received in real time, the owner can immediately provide feedback if something can be improved before service begins, such as moving a cooler out of sight, adjusting equipment placement, straightening a tablecloth, or making other presentation improvements. This real-time oversight helps ensure every LaLa Tacos event reflects the same professional standards, regardless of which catering team is serving the event.

The information collected in these reports also serves as the foundation for many of the event stories and catering articles published on our website. Rather than relying on memory, our content is based on information documented immediately after real catering events, helping us share authentic experiences from the celebrations we have served throughout Southern California.

Below are some of the questions included in our Quality Assurance Report and why we ask them.

Was the Host Happy?

Our most important measurement is whether our client was happy with the overall experience. Great tacos are only part of a successful event. We want every client to finish their celebration feeling confident they made the right decision by choosing LaLa Tacos.

Did Guests Like the Food?

Great food is the foundation of everything we do. We ask our catering teams to pay attention to guest reactions throughout the event so we can better understand how our menus are being received.

What Compliments Did Guests Give?

Whenever possible, our catering teams document guest compliments using their exact words. These authentic comments help us understand what guests enjoyed most and provide valuable insight into the overall dining experience.

Which Protein Was the Most Popular?

Tracking our most popular proteins across hundreds of events helps us better understand guest preferences, improve menu recommendations, and identify trends over time.

Did Guests Come Back for Seconds?

Guests returning for additional tacos is one of the strongest indicators that they enjoyed the food. Tracking this information helps us evaluate menu popularity, food quality, and guest satisfaction.

How Was Your Interaction With the Coordinator?

Professional communication with venue coordinators, wedding planners, and event staff helps events run smoothly and strengthens the relationships we build with the venues where we cater.

Which Van Did You Drive?

Every catering vehicle is assigned to a specific event. We document which van was used because our fleet is monitored using Verizon Connect. If a driver speeds, brakes aggressively, or drives unsafely, we receive an immediate alert. We would much rather have our team arrive a few minutes later than receive a traffic ticket or be involved in an accident. Safe driving protects our employees, our clients, our equipment, and everyone else on the road.

Did You Arrive on Time?

Arriving early provides enough time to unload, organize equipment, complete setup, and be fully prepared before guests begin arriving.

Did Service Begin on Time?

Weddings, corporate events, and private celebrations often follow carefully planned timelines. Beginning service on time helps the entire event stay on schedule.

Did You Pack the Van Carefully Before Leaving?

Proper loading helps prevent damaged equipment, forgotten supplies, and unnecessary delays before arriving at the event.

Did You Verify Everything Was Loaded Before Leaving the Kitchen?

Before leaving our kitchen, every catering team compares the order paperwork against everything loaded into the van. This Pre-Departure Checklist has dramatically reduced forgotten items and loading mistakes.

Did You Text Your Estimated Arrival Time to the Client?

Keeping clients informed gives them confidence that our team is on schedule and helps reduce unnecessary stress before the event.

Was Your Taco Cart Clean?

Every taco cart represents the LaLa Tacos brand. We expect every cart to arrive clean, organized, and ready to impress our clients and their guests.

How Many Times Was the Taco Bar Replenished?

Freshness is one of our highest priorities. Tracking replenishments helps us verify that our taco bars remain attractive, well stocked, and inviting throughout service.

Were Coolers, Hot Boxes, and Clear Boxes Hidden From Guests' View?

Guests should remember beautiful taco carts and elegant taco bars, not storage containers and equipment. Our teams work to keep work areas organized and visually appealing throughout every event.

Was There a Menu Attached to the Front of the Taco Cart?

Displaying the menu allows guests to decide what they would like before reaching the front of the line. This keeps service moving efficiently and allows our team to spend more time serving tacos instead of repeatedly explaining the menu.

Did You Have Enough Protein Containers and Salsa Containers?

Monitoring supply usage helps us improve inventory planning and ensures every catering team has the equipment needed for future events.

If You Used Supplies From the Emergency Box, Did You Notify Operations?

Every catering van carries an Emergency Box stocked with backup serving supplies. If any items are used, Operations is notified immediately so the supplies can be replaced before that vehicle is assigned to its next event.

How Would You Rate Your Helper?

Great taco catering requires great teamwork. Lead caterers evaluate their helpers after every event so outstanding performance can be recognized and coaching can be provided whenever needed.

What Suggestions Do You Have to Improve Future Events?

Some of the best ideas for improving LaLa Tacos have come directly from the employees serving our events. Every suggestion is personally reviewed by the owner because continuous improvement has always been one of the foundations of our company.

Quality Begins Before We Leave the Kitchen

The Quality Assurance Report is only one part of our quality process. Before every catering event, every LaLa Tacos Lead Caterer completes a detailed Pre-Departure Checklist from their mobile device before leaving our kitchen. The completed checklist is immediately delivered to Aron or Celina, allowing them to review important quality assurance, food safety, equipment, presentation, and customer communication checks in real time.

This additional layer of oversight helps verify that taco carts are clean and presentation-ready, grills have been tested, safety equipment is packed, food and supplies have been verified, and the catering team is fully prepared before departing for the event. It helps us prevent problems before they happen rather than trying to solve them after arriving at a customer's event.
